Making Delicious Duck Gizzard Stir-fried with Pineapple
Duck Gizzard Stir-fried with Pineapple is very aromatic, the gentle sweet and sour taste of pineapple deeply infused makes the duck gizzard more delicious and eliminates any unpleasant smell. Additionally, the addition of crispy fresh bean sprouts is also an attractive point of this stir-fry dish.
Ingredients
- 500g duck gizzard
- 300g pineapple
- 150g bean sprouts
- 2 dry onions, 4 cloves of garlic, a small piece of ginger
- 1 horn chilli if available
- Green onion, coriander, fennel
- Seasonings: oyster oil, seasoning powder, MSG, fish sauce, ground pepper
Instructions
Preparing duck offal
Duck offal includes intestines, gizzard, bile, and liver. Depending on preference, you can choose which to use for cooking.
Clean the duck with coarse salt, rinse and drain. Cut the liver, offal, and bile into bite-sized pieces. For the gizzard, you may trim a bit to make the dish more appealing.
After cutting the duck offal, blanch them in boiling water for about 30 seconds, then rinse. Blanch the bile last to avoid discoloring.
Preparing other ingredients
Peel the pineapple, remove the eyes, quarter it, trim the core, and cut into small triangles.
Rinse bean sprouts in salt water and drain.
Finely chop onions, garlic, and ginger.
Wash and chop green onions, coriander, and lemon balm after soaking in salt water. Drain well.
Slice the horn chili diagonally.
Making duck offal stir-fry with pineapple
Fry the onions, garlic, and ginger with 2 tablespoons of cooking oil, adding a bit of fish sauce to enhance the aroma. When the onions, garlic, and ginger are golden and fragrant, add the duck offal to stir-fry.
Once the duck offal is evenly coated with oil, add the pineapple, stir well. Cook over medium heat, cover the pan/pot, stir-fry for about 4 minutes until the duck offal is fully cooked, while the pineapple becomes soft, releasing its sweetness and mild sourness.
After about 4 minutes, add bean sprouts. Taste and season with seasoning powder/or broth mix, MSG, oyster sauce, fish sauce. Then add green onions, coriander, lemon balm, and horn chili. Stir-fry quickly for about 8-10 seconds, sprinkle some ground pepper if desired, and turn off the heat.
