How to cook savory Stir-fried Beef with Onion for a change of taste for the whole family
Stir-fried Beef with Onion is a great dish to pair with rice. Especially, this stir-fry can also be served as a snack for casual drinking sessions, and you will never get tired of it.
Ingredients
- 300g beef
- 1-2 onions ~ 300g
- 80g carrot
- 1-2 lemongrass stalks, 1 hot chili pepper
- 1 horn pepper
- Celery, Western garlic ~ 70g
- 1 dry onion, 3 garlic cloves, 1 small piece of ginger
- Salt, white wine
- Seasoning: flavoring powder, MSG, oyster sauce, ground pepper, fish sauce
Instructions
Preparation of Lamb Meat
When buying lamb for this dish, opt for cuts with plenty of skin, a good mix of fat and lean meat to prevent the meat from drying out during the cooking process.
Once you get the meat home, massage it with coarse salt, ginger wine or vodka + fresh crushed ginger to cleanse and eliminate the distinctive odor. After that, rinse thoroughly, drain the water and slice into thin pieces.
Marinate the lamb with:
- 1 teaspoon of oyster oil
- 1 teaspoon of flavoring powder
- 1/2 teaspoon of sugar
- 1 tablespoon of cooking oil
Mix well and marinate the lamb for about 10-15 minutes.
Preparation of Other Ingredients
Finely chop ingredients like shallots, garlic, ginger, lemongrass, and hot chili.
After peeling and washing the onions, cut them into wedges about 2.5cm wide.
Julienne the carrots.
Pick and rinse the celery and western garlic in salt water, cut into 2-3cm long pieces. For the horn chili, julienne half of it and diagonally slice the other half.
Making Lamb Stir-fry with Onions
Add 2 tablespoons of cooking oil to a pan, heat it up and sauté half of the chopped shallots, garlic, lemongrass, ginger, and chili until fragrant.
Next, add the lamb and stir-fry at high heat. To keep the lamb from getting tough, only cook until it's medium rare, turning a light pink color, and then remove it to a separate plate. This is similar to how you would cook stir-fried beef.
Add another 2 tablespoons of cooking oil to the pan and sauté the remaining chopped shallots, garlic, and ginger.
Then, add the carrots and stir-fry for about 30 seconds before adding the onions. Stir well.
Season the dish with 1 teaspoon of flavoring powder, 2 teaspoons of oyster oil. Note that after seasoning, you should increase the heat to keep the onions crispy.
Once the seasoning is added, include the celery, western garlic, horn chili, and lamb. Season with fish sauce to taste. Stir quickly for another 10-15 seconds, sprinkle some ground pepper, stir evenly, and turn off the heat.
