How to make sweet and sour, tantalizing Pineapple Duck Stir-fry

Ingredients
- 550g of boneless duck meat
- 1 pineapple ~ 400g
- 2 dry onions, 4-5 garlic cloves, 1 ginger knob
- 1 horn chili, 1-2 spicy chili
- Spring onions, coriander, sawtooth coriander
- Salt grains
- Seasonings: Oyster sauce, seasoning powder, fish sauce, MSG, ground pepper

Instructions
Preparing the duck meat
Massage the duck meat with grain salt. If you have ginger wine or white wine, you can also use it with grain salt to clean and get rid of the duck meat's unpleasant smell.
After massaging thoroughly, rinse it clean. Once the duck meat is dry, slice it into pieces suitable for eating, approximately 1.5 cm thick is ideal. Besides duck meat, you can also use duck organs for a delicious pineapple stir fry.
After slicing the duck meat, marinate it with:
- 1 teaspoon of seasoning powder
- 1/2 teaspoon of MSG
- 1/2 teaspoon of ground pepper
- 1 tablespoon of fish sauce
- 1 tablespoon of cooking oil
Mix well and let the meat absorb the spices for about 15 minutes.
Preparing the other ingredients
After peeling and removing the eyes of the pineapple, cut it into quarters, remove the core and cut it into small triangle pieces.
Chop scallions, garlic, and ginger finely. If you can handle spicy food, you can also chop some chili peppers.
Rinse scallions, Asian coriander, and culantro in salt water, then chop them up.
Slice the red chili peppers diagonally.
Cooking Duck Stir Fry with Pineapple
Firstly, sauté the chopped scallions, garlic, ginger and chili peppers with a little cooking oil. At this step, you can also add a little fish sauce to sauté with scallions, garlic, and ginger, this will make your stir-fry more fragrant.
When the garlic, scallions, and ginger become golden and fragrant, add the duck meat to stir fry. Cook the duck meat over high heat to sear the outer layer, which gives it a rich aroma, while keeping the meat inside moist.
Stir fry until the duck meat is cooked through, with no more red color, then add the pineapple. Stir evenly and season to taste.
Stir fry for about 3 more minutes until both the duck and pineapple are cooked. The duck meat will remain tender and savory. At this point, add the scallions, culantro, Asian coriander, and red chili peppers. Quickly stir fry for another 5-6 seconds, then turn off the heat and serve the dish.
