Making Simple yet Delicious Stir-fried Noodles with Egg

The Stir-fried Noodles with Chicken Egg has the chewy texture of instant noodles, fluffy and rich egg. If combined with some sausages and bean sprouts, this fried noodle dish will be much more appealing.

Preparation of Ingredients

Divide the eggs into two parts. For the majority, remove the shell and put the yolk and egg white into a bowl. Add two teaspoons of fish sauce, a pinch of MSG, a bit of cooking oil to make the eggs rich, fluffy, and flavorful then whisk until frothy. The remaining eggs will be used to mix with the instant noodles.

Peel and thinly slice the dried onions.

Cut the green onions into small pieces. Rinely clean the bean sprouts with water and leave to dry.

Cut the sausage into small pieces, about 3-4 pieces depending on the length of the sausage. Use a knife to score each piece into eight parts (not completely cut through). This is to create a flower shape when boiled.

Boil a pot of water, drop the sausages in when it boils. The boiling time for these small pieces is about 2-3 minutes over medium high heat. Since they will be stir-fried later, they do not need to be boiled thoroughly, as the sausage will dry out. Remove the sausages and let them drain.

You can also use pre-cooked sausages, cut into small slices. Pre-cooked sausages do not need to be boiled.

You can utilize the sausage boiling water to blanch the instant noodles. It's best to blanch the noodles after all the ingredients have been prepared since the noodles might dry out and stick together if left too long, so do this at the end, right before stir-frying.

Peel the instant noodles and place them in the boiling water. If you prefer crispy noodles, remove them after about 15 seconds. If you prefer medium-cooked noodles, wait another 10-15 seconds. However, do not blanch them too long as they could overcook and become mushy.

Drain the noodles and stir them to separate the strands. Normally, at this stage, I would cut open the oil packet from the noodle package, mix thoroughly to prevent the noodles from sticking together. Add a bit of cooking oil, mix with the noodles and stir. Crack the remaining eggs in here, mix well. The purpose is to let the eggs blend into the noodle strands, making them rich and delicious.

Making Stir-Fried Egg Noodles

Add 2 tablespoons of cooking oil to the pan, sauté half of the dried onions until fragrant. Then, pour in the eggs and stir evenly until they are half-cooked, then set them aside.

Continue sautéing the remaining dried onions with a bit more cooking oil. Then, add the instant noodles mixed with eggs. Stir evenly until the noodles and eggs are cooked. When stir-frying noodles, use high heat to maintain the crispiness of the noodles. Stir quickly until the eggs start to cook then add the sausages, bean sprouts, and the previously stir-fried eggs. Mix everything together.

At this point, season to taste with oyster sauce or soy sauce, a bit of chili sauce if you like a bit of spice. After seasoning, add the green onions, stir well and turn off the heat. If you prefer softer stir-fried noodles, stir-fry a bit longer; if you like crispy stir-fried noodles, stir-fry quickly.

Plate the stir-fried egg noodles, a visually appealing dish that is also delicious. Crispy, sweet, and rich in flavor. Occasionally, you can make stir-fried noodles as a change from rice. When eating, you can add a bit of ketchup, chili sauce, or soy sauce to enhance the flavor.
