Instructions
Marinate the beef
In this recipe, Cookbeo uses beef ribs. After buying the ribs, cleanse them thoroughly with grain salt, let them drain, then slice them into portions suitable for consumption, ideally about 2.5-3cm thick.
For 400g of beef ribs, marinate them with:
- 1/2 tablespoon of seasoning powder
- 1/2 tablespoon of sugar
- 1 tablespoon of oyster sauce
- 2 tablespoons of cooking oil
Mix thoroughly and marinate the beef for about 15-20 minutes.
Prepare the other ingredients
Soak and rinse the sour star fruit in salt water, let it drain, then cut off the ends, remove the ridges. Next, slice it into pieces about 1.5-2cm thick.
Divide the tomatoes into wedges.
Mince the garlic and ginger.
After washing the green onions, betel leaves, and Vietnamese coriander, chop them roughly.
Slice the hot chili peppers diagonally into thin pieces. When cooking this sour soup, Cookbeo often adds a bit of chili, as the spiciness enhances the appealing flavor of the soup.
Cook the sour star fruit beef soup
Add a bit of cooking oil to a pot. When the oil is hot, fry the minced garlic and ginger until fragrant. Then add the beef and stir-fry over high heat.
Stir-fry until the beef firms up, then add the sour star fruit and half of the tomatoes. Stir for about 1 minute so that the star fruit and tomatoes evenly absorb the oil and beef juice.
Add water to make the soup. The amount of water for 4 people is about 1.5 liters.
When the soup starts to boil, reduce the heat and let it simmer. Cover the pot and cook for about 40 minutes until the beef becomes tender. Actually, the sourness of the star fruit and tomatoes also helps to tenderize the beef faster.
After about 40 minutes, the beef should be tender. Add the rest of the tomatoes. Season to taste with seasoning powder, fish sauce, and if it's too sour, you can add a bit of sugar to neutralize the sourness.
Finally, add the green onions, betel leaves, Vietnamese coriander, and chili. Cook for another 3-4 seconds, then turn off the heat and ladle the beef soup into bowls.
The sour star fruit beef soup is incredibly fragrant. The slightly sweet and sour taste of the star fruit, combined with the aromatic betel leaves, makes this soup even more appetizing. This sour soup, when paired with crispy pickled eggplants, caramelized pork or pork belly... will make you eat more rice.
