Sweet and Fragrant Sugar Cane Marinated in Pomelo Flower
At the end of Spring, beginning of Summer, when the pomelo flowers bloom white and fragrant across the flower stalls in the streets, buy some and marinate them with sugar cane. This is a sweet, refreshing treat, very delicate but delightful to enjoy, especially when savoring with a cup of tea, a sweet cake, while chit-chatting with loved ones and friends.

To make sugar cane marinated in pomelo flower, when buying pomelo flowers, choose the bunches with bloomed flowers or large buds, petals not wilted.
Meanwhile, for sugar cane, you can choose either green or purple sugar cane, which is sweet
Instructions
Preparing the Ingredients
Peel the sugarcanes, cut them into chunks, wash them thoroughly, and let them dry. Then, cut them into bite-sized round slices. If the slices are too big, you can halve or quarter them.
Separate the petals of the pomelo flowers and soak them in saltwater. You can also include larger buds in the mix with the sugarcanes. Avoid using the stamens and smaller buds as they have a slightly bitter taste.
After separating the petals, gently rinse them in diluted saltwater and rinse again. Be careful not to crush the petals. Then, let them dry thoroughly.
Making Sugarcane Marinated in Pomelo Flower
Once the pomelo flowers are dried, prepare a jar or zip bag for storing the marinated sugarcane.
Place a layer of sugarcane in the jar/bag, followed by a layer of pomelo flower petals, then another layer of sugarcane, and so forth until you've used up all the prepared ingredients. Then, seal the jar or zip the bag and store it in the refrigerator. After 3 hours, it's ready to be enjoyed. By storing it this way, you can gradually consume it within 3-5 days without it spoiling. If possible, vacuum-sealing it will extend its shelf life even further.
