Refreshing Sour Mushroom Soup for Summer
A simple dish to prepare, the Sour Mushroom Soup incorporates familiar ingredients such as tomatoes and pineapple. The interesting mix of fresh pork paste with a bit of wood ear and shiitake mushrooms gives the soup an enticing flavor and a crunchy sweetness.
Ingredients
- 450g tomatoes
- 300g pineapple
- 200g fresh pork paste
- 10g wood ear, shiitake mushrooms
- 200g bean sprouts
- 2 dry onions
- 1 chili pepper
- Green onion, coriander
- Spices: seasoning powder, MSG, soup powder, fish sauce, sugar
Instructions
Preparing the mushrooms
To ensure the mushrooms are crunchy and flavorful, you can also use wood ear mushrooms and shiitake. Soak these two ingredients in water until they are soft, wash them thoroughly, chop them finely, and mix them evenly with the raw pork.
Next, marinate the pork with seasonings to enhance the mushrooms' flavor and aroma, including:
- 2 teaspoons of fish sauce
- 1/2-1 teaspoon of ground pepper
- 1 tablespoon of cooking oil
Mix well and let the pork absorb the flavors for about 10-15 minutes.
Preparing other ingredients
Peel the onion and slice it thinly.
Wash the green onions and Chinese celery thoroughly, then chop them. Dice the chili.
Soak the bean sprouts in salt water, rinse them thoroughly, and drain the water.
Quarter the tomatoes.
Remove the core from the pineapple, and cut it into small triangles.
Besides tomatoes and pineapple, when making sour mushroom soup, you can also use other ingredients and seasonings to create sourness such as yeast, rice vinegar, tamarind, dracontomelon, calamondin...
Making sour mushroom soup
Sauté the onion in about 2 tablespoons of cooking oil. Then add the chopped tomatoes and pineapple. Stir-fry with 1 teaspoon of broth mix for a stronger flavor.
When the tomatoes and pineapple are soft and thick, add water to make the soup. The amount of soup for 3-4 average eaters is about 1.2-1.5 liters.
When the soup boils, scoop and roll the pork into balls and drop them into the soup. Then continue to cook for another 8-10 minutes over medium heat until the mushrooms are cooked.
Next, add the remaining quartered tomatoes and bean sprouts. Stir well, once the soup boils again, season to taste with broth mix, flavor enhancer, monosodium glutamate, and fish sauce. If the soup is too sour for your liking, add a little sugar to balance it.
After seasoning, add the green onions, Chinese celery, and chili, stir well and turn off the heat.
