Tofu tomato soup is easy to prepare and enjoyable to eat. The flavor of this soup is delicate and refreshing, never leaving you feeling overwhelmed.
Ingredients
- 5 small tomatoes
- 1 block of tofu ~ 350g
- 100g bean sprouts
- 4 dried onions
- Green onions, culantro
- Seasonings: Soup powder, seasoning powder, MSG, fish sauce
Instructions
Preparing the ingredients
Rinse the tofu, drain the water, and cut into small squares or rectangles that are bite-sized.
You can choose either traditional tofu or soft tofu. If you like, you can lightly fry the tofu, but not frying it will make the soup more refreshing.
Quarter the tomatoes.
Soak the bean sprouts in salt water to clean, then drain.
Slice the onions thinly. Chop the green onions and Vietnamese coriander.
Cooking the tofu tomato soup
Fry the onions with about 2 tablespoons of cooking oil until they're fragrant.
Next, add the tomatoes and sauté. Add a little broth mix or seasoning to enhance the taste.
When the tomatoes are soft, pour in water to make the soup. For 3-4 average servings, about 1.2-1.5 liters of water is suitable.
When the soup boils, add the tofu. Once the soup returns to a boil, season to taste with broth mix, seasoning, and a pinch of MSG.
Cook for another 2-3 minutes until the tofu is cooked, then add the bean sprouts, green onions, and Vietnamese coriander. Add a little fish sauce to enhance the soup's flavor and aroma. Once the soup boils again, turn off the heat.
The tofu tomato soup has a gentle aroma, sweet and slightly sour, and is refreshing. This is an easy-to-make soup with a pleasing flavor, very suitable when you're busy or want a light change of pace from the usual fish, meat, or pork rib soups...
