Rinse the fish cakes thoroughly, let them drain, then lightly fry them to bring out a rich aroma and eliminate any fishy smell.

Finely chop the onions, garlic, ginger, and chili.

Wash and pick the green onions and dill. Cut the white parts of the onions and the dill stems, then mix them with the chopped onion, garlic, ginger, and chili. Cut the green parts of the onions and the dill fronds into small pieces.

Peel and dice the tomatoes for quick sautéing, which will result in a smooth and thick sauce.

Making Fish Cakes in Tomato Sauce

Add 3 tablespoons of cooking oil to a pan. When the oil is hot, sauté the dried onions along with the white parts of the green onions and the dill stems.

Sauté these ingredients until fragrant, then add the tomatoes. Stir well and sauté the tomatoes over medium-low heat for 2-3 minutes until they are soft and smooth.

Next, season the tomato sauce with:

  • 1 tablespoon of chili sauce
  • 2.5 tablespoons of fish sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of sugar
  • 100ml of filtered water

Stir well and bring this mixture to a boil over low heat. You can adjust the seasoning to suit your family's taste, especially the amount of sugar.

When the tomato sauce boils, add the fish cakes. Cook the fish cakes in the tomato sauce for about 12-15 minutes over medium-low heat. Cover the pot/pan, occasionally flipping the fish cakes to ensure they absorb the sauce evenly.

After about 15 minutes, the fish cakes in tomato sauce should be ready. If you prefer a thicker sauce, mix 1 tablespoon of starch with 2 tablespoons of filtered water. Stir well, then slowly add the starch mixture to the pan, stirring constantly. Continue cooking for 2 more minutes until the starch is cooked.

Sprinkle with chopped green onions and dill, cook for about 5-6 seconds more, then turn off the heat, and transfer the fish cakes in tomato sauce to a bowl or a deep plate to accommodate the sauce. Finally, sprinkle a little ground pepper on top.
