- Spices: fish sauce, sugar, ground pepper, MSG, turmeric powder (or fresh turmeric)

Preparing Chicken and Ingredients
Massage the chicken with grain salt to clean and remove any unpleasant smell. If ginger wine is available, you can use it to rub together with the grain salt. Make sure to rub inside and outside of the chicken thoroughly then rinse and drain.
Next, cut the chicken into bite-sized pieces. If you're making fried chicken, cut smaller pieces for quicker seasoning absorption and faster cooking. If you have more time to make stewed chicken, you can cut larger pieces.
For ingredients like lime leaves, lemongrass, ginger, green onions, chili, divide them: half cut into small pieces, crush finely to marinate with the chicken. The rest is chopped thinly for sautéing.
For the ingredients to marinate with the chicken, put them into a mortar, crush finely with 1 tablespoon of grain salt. Then add this mixture to the bowl containing the chicken to marinate. Along with it, add the following:
- 1/2 tablespoon sugar
- 1 tablespoon seasoning
- 1/3 tablespoon turmeric powder or you can crush a small fresh turmeric root to marinate
- A little MSG
- 2 tablespoons fish sauce
- A little ground pepper
- Add 1 tablespoon cooking oil
Mix well and let the chicken absorb the spices for about 15 minutes. If you have more time, marinate it longer for the chicken to absorb more flavors, making it more delicious and flavorful.
Making Lime Leaf Fried Chicken
Fry the green onions, ginger, lemongrass, and chili with about 2 tablespoons of cooking oil. Sprinkle some fish sauce for extra aroma.
Next, when the onions and ginger are golden and fragrant, add the chicken to fry. Fry the chicken on high heat to firm up the meat.
When the chicken is fully cooked, add a little water to prevent the chicken from being too dry, about 100ml. Lower the heat a bit, fry for another 15 minutes until the chicken is tender and importantly, well-seasoned. If you're making stewed chicken, cook it longer.
After about 15 minutes, taste and adjust the seasoning, add a little more fish sauce. Finally, sprinkle lime leaves, stir well. You can sprinkle a little more ground pepper before turning off the stove.
