How to Make Vietnamese Salted Roasted Peanuts
You can follow this salted roasted peanuts recipe to get shiny, beautifully roasted peanuts with an even salt coating. They’re perfectly seasoned, crispy for a long time, and won’t become oily quickly.

To make salted roasted peanuts (also known as roasted salted peanuts), you can use either white or red peanuts. Choose evenly sized, plump peanuts that are free from mold, damage, or pests.
Since the skin will remain on, ensure the peanuts are well-cleaned. You can sift and clean them carefully, or even rinse them and let them dry thoroughly before roasting.
In addition to fine salt, you can also use seasoning salt for roasting peanuts. However, because seasoning salt contains MSG, it may create a smoother flavor but tends to attract moisture more than regular salt.
Instructions
Make Salted Roasted Peanuts
For 200g of peanuts, use about 2 tablespoons of cooking oil in a pan. Add the cleaned peanuts into the pan while the oil is still cold, and stir well to coat the peanuts evenly with the oil.
Turn on the heat to start roasting. To ensure the peanuts stay crispy for a long time and don’t become soggy, roast them over very low heat.
Adding the peanuts while the oil is cold allows the oil to coat them evenly. Roasting over low heat helps the peanuts cook slowly and evenly, ensuring a crisp texture without becoming chewy or releasing too much oil over time.
Keep stirring continuously. To fully roast 200g of peanuts, it will take about 35-40 minutes over very low heat.
Once the peanuts are cooked and fragrant, turn off the heat and transfer them to a basket to cool. Shake them gently to release excess heat.
Next, add about 2 teaspoons of fine salt to the pan to dry roast. Adjust the amount of salt based on your taste preference.
Dry roast the salt over very low heat to reduce its harshness. This ensures that when the salt is mixed with the peanuts, it stays dry and helps the peanuts remain crisp longer without becoming oily too quickly.
After about 1 minute of roasting the salt, turn off the heat and sprinkle the salt evenly over the peanuts. Toss the peanuts lightly to coat them with a thin layer of salt. If you prefer, you can return the peanuts to the pan with the salt and stir lightly.
Once the salted roasted peanuts have cooled completely, they will have a shiny appearance with an even, thin layer of salt. They will be crispy with a light, savory taste. Store the cooled peanuts in an airtight container to enjoy over time. These peanuts are great as a snack or served with rice.
