Squid Preparation

Keep the squid's head intact for visual appeal. Skillfully remove the squid's ink sack and the membrane at the end of the head while also removing the spine along the squid's back. You can keep the outer layer of the squid to enhance its color when cooked.

For this dish, you can select any type of squid: tube squid, milk squid, egg squid, etc. But there's no need to choose a large squid as you would for stir-fry dishes, just select a fresh one with thick flesh. 

After preparing the squid, clean it and remove its characteristic smell. Use coarse salt, vodka, and minced ginger to gently massage the squid, then rinse it thoroughly and let it dry.

Preparation of other ingredients

Peel the garlic and chop finely.

Wash the ginger, crush half of it, chop finely, and cut the other half into thin strips.

Cut off the root end of the green onions, wash them, and chop finely.

Frying the Squid

Add cooking oil to a pan, the amount of oil should be enough to submerge the squid when frying. Once the oil is hot, drop the squid in to fry. The squid will float to the surface when cooked, turn it over to ensure even browning.

The frying process should take just over a minute over medium-high heat. Avoid overcooking as the squid will become tough. Frying enhances the squid's rich aroma and eliminates its fishy smell.

Use the oil you just used to fry the squid, take 2 tablespoons of hot oil and pour it over the chopped green onions to make scallion oil. Once the onions turn green, strain the oil into a bowl.

Making Fried Squid with Fish Sauce

Add 2 tablespoons of cooking oil to the pan (use the oil you just used for the scallion oil). Once the oil is hot, sauté the garlic and ginger, add a bit of mild chili powder, then mix in 35ml fish sauce + 30g sugar + 40ml filtered water + 1/2 teaspoon ground pepper + 1/2 teaspoon MSG.

Bring this mixture to a boil until it thickens, then add the squid. Toss the pan to evenly coat the squid with the sauce, then turn off the heat.
