How to Make Stir-Fried Chicken with Mushrooms
Stir-fried chicken with mushrooms is a nutritious and delicious stir-fry dish. The chicken combines with various mushrooms like enoki, straw, and shiitake, offering a rich, yet light flavor that is incredibly appetizing.

For stir-frying chicken with mushrooms, choose free-range chicken for firmer and more flavorful meat. Avoid older chickens, as they can be tough. Hen chicken is ideal for its sweetness and tender texture.
The mushrooms used in this dish can vary, such as enoki, straw mushrooms, king oyster mushrooms, fresh or dried shiitake mushrooms, or seafood mushrooms.

Prepare the Chicken
Rub the chicken with salt and ginger wine to clean and remove any odor.
This recipe uses free-range chicken, specifically thigh and drumstick meat, which is tender and flavorful. You can also use chicken breast, but be mindful of cooking time to avoid dryness.
After cleaning, rinse the chicken and let it dry.
Cut the chicken into bite-sized pieces, about 1cm thick. Boneless pieces cook faster and absorb seasoning better. If you prefer, you can keep the bone and chop the chicken into small pieces.
Marinate the chicken (450g) with the following ingredients:
- 1 teaspoon soup powder
- 1/2 teaspoon MSG
- 1 tablespoon fish sauce
- 1/2 teaspoon ground pepper
- 1/2 tablespoon cooking oil
Prepare the Other Ingredients
Trim the mushroom stems and separate the enoki and king oyster mushrooms into smaller pieces. Rinse the mushrooms and soak them in lightly salted water or, for extra cleaning, use rice water to soak them, which also helps remove any strong odors.
After soaking, rinse the mushrooms thoroughly and let them dry before slicing them.
For longer mushrooms like enoki, cut them into 2-3 sections. Slice the thicker king oyster mushrooms thinly. Small shiitake mushrooms can be left whole, or you can score the tops for decoration, while larger ones can be sliced.
Cut the green onions into 2-3cm sections. Thinly slice the lime leaves, which add a refreshing aroma to the stir-fry.
Cook the Stir-Fried Chicken with Mushrooms
When the chicken is golden and firm, add the king oyster mushrooms and shiitake mushrooms first, as they take longer to cook. Stir for 15-20 seconds, then add the enoki mushrooms. If you prefer a crunchy texture and less liquid, increase the heat to high. If you want more broth, cook over lower heat.
Once the mushrooms are coated with oil, season to taste with soup powder, MSG, oyster sauce, and a bit of fish sauce for extra aroma.
Continue stir-frying for 2-3 minutes over high heat until the mushrooms are just tender. Add the green onions and lime leaves, and if desired, sprinkle with ground pepper. Stir for another 5-6 seconds, then remove from heat and serve.
