How to Make Stir-fried Beef with Pineapple
The combination of stir-fried beef with pineapple creates a sweet and sour taste that is easy to enjoy and not heavy. Moreover, by following Cookbeo's technique, your stir-fried beef will be tender, flavorful, and not dry at all.
Ingredients
- 300g beef
- 1 pineapple
- 2-3 celery stalks
- 2 leeks
- 1 garlic bulb (~ 6-8 cloves)
- 1 piece of ginger
- Coarse salt
- Seasonings: oyster sauce, cooking oil, salt, MSG, sugar, ground pepper
Instructions
Preparing the Beef
Slice the beef thinly and marinate it with 1 tablespoon of oyster sauce, 1/4 tablespoon of salt, 1/2 tablespoon of MSG, 1/3 tablespoon of sugar, 1/4 tablespoon of ground pepper, and 1 tablespoon of cooking oil. Mix well and let the beef absorb the seasoning for about 15-30 minutes.
Preparing the Other Ingredients
Peel and clean the pineapple. Usually, for the amount of beef used, you'll need about half or two-thirds of the pineapple for the perfect balance of sweet and sour.
Trim and wash the celery and leeks. Cut them into pieces about the length of a finger joint. When washing the leeks, separate the stalks to remove any dirt or grit hiding between the layers.
Peel the garlic and clean the ginger, then finely chop both. Add a portion of the garlic and ginger to the beef for added flavor.
Cooking the Stir-fried Beef with Pineapple
Heat 1 tablespoon of cooking oil in a pan. When the oil is hot, add the ginger and half of the chopped garlic to sauté until fragrant, then add the beef and stir-fry.
To keep the beef tender, stir-fry it over high heat, but only until it's half-cooked, then remove it from the pan. You will add the beef back later, once the pineapple is done cooking, so the beef stays moist and tender. This is the secret to making restaurant-quality stir-fried beef with pineapple.
In the same pan, add another tablespoon of cooking oil and sauté the remaining garlic. Then, add the pineapple.
While stir-frying the pineapple, you can add a little salt and sugar to balance out the sourness and enhance its flavor. Once the pineapple softens and absorbs the oil, add the beef back in, increase the heat, and stir-fry quickly. Adjust the seasoning with oyster sauce, MSG, and a bit of ground pepper to taste.
Stir-fried beef with pineapple should be served hot. The beef is tender and flavorful, while the pineapple is juicy with a balanced sweet and sour taste, making the dish irresistibly delicious.
