Prepare the Beef and Pork

Rub the beef with coarse salt and ginger wine, then rinse it clean. Let it drain and cut into slices about 2.5 cm thick.

Tenderize both the beef and pork to make them softer and allow the marinade to penetrate better.

For grilling, choose beef cuts like ribeye, chuck, or short ribs. For pork, opt for cuts like pork chops, tenderloin, jowl, or belly.

Peeled shallots, finely chopped. Peel off the outer layers of lemongrass, rinse, and chop finely. Clean the ginger, crush, and chop finely. Peel the garlic, chop 2/3 finely, and slice the remaining garlic thinly for wrapping with the vegetables.

For beef: Marinate the beef with finely chopped garlic, ginger, lemongrass, hot chili pepper, 2 tablespoons oyster sauce, 1 tablespoon soy sauce, 2 tablespoons sesame oil, 1/2 tablespoon ground pepper, 1/2 tablespoon MSG, 1/2 tablespoon fish sauce, 1/2 tablespoon sugar, 1 tablespoon honey, 1 tablespoon mild chili powder, and 1 tablespoon cooking oil.

For pork: Marinate the pork with 1 tablespoon oyster sauce, 1/2 tablespoon soy sauce, 1/2 tablespoon fish sauce, 1/2 tablespoon sugar, 1/2 tablespoon honey, 1 tablespoon mild chili powder, 1/3 tablespoon MSG, 1/2 tablespoon ground pepper, 1 tablespoon sesame oil, 1 tablespoon annatto oil, 1 tablespoon cooking oil, along with chopped lemongrass, shallots, garlic, and chili.

Mix well and let the meat absorb the flavors for about 30 minutes.

Make Korean Grilled Meat Dipping Sauce

Here's how to make a delicious and authentic Korean-style dipping sauce for grilled meat:

Add 2 tablespoons of sesame oil, 2 tablespoons of oyster sauce, 3 tablespoons of chili sauce, 2 tablespoons of ketchup, and 1/2 tablespoon of sugar to a pan. Bring this mixture to a boil, then sprinkle roasted white sesame seeds on top. Stir well before serving.
