For the broccoli, soak and rinse it thoroughly in salt water, then break it into small branches and slice into bite-sized pieces. The base of the broccoli stalk should be peeled to remove the tough, fibrous outer layer and also cut into small pieces.
Green broccoli tends to be tougher than white broccoli, so remember to remove the fibrous layer when you break it into small florets.
Peel the carrot and cut it into thin slices or flower shapes, with a thickness of about 0.1cm.
To keep the broccoli crispy and not tough from overcooking or undercooked from hurriedly stir-frying, blanch it in boiling water. Soak the broccoli in boiling water for about 40-50 seconds, then put it in a basket, rinse with cold water, and let it drain.
