Prepare the Beef

Slice the beef thinly, then marinate with 1 teaspoon of oyster sauce, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/2 teaspoon of MSG, and 1/2 teaspoon of sugar to make the beef tender. To prevent the beef from releasing water while stir-frying, add 1/2 tablespoon of cooking oil to the marinade. Let the beef marinate for at least 15 minutes to absorb the seasoning.

For stir-fried beef dishes, choose flank steak for a tender texture that remains juicy but still slightly firm.

Prepare Other Ingredients

Celery, leek, onion, carrot, and chili peppers are the vegetables used in this dish.

Trim and discard the roots and any wilted or yellow leaves from the celery and leek. Rinse, then soak them in saltwater for about 5 minutes. Rinse again, drain, and cut into 5 cm (2-inch) sections.

Peel the onion, cut off the root end, then slice it into small wedges. Alternatively, you can lay the half onion flat and slice it thinly.

Peel the carrot, use half of it, and either carve it into flower shapes or cut it into thin strips.

Wash the chili pepper and slice it diagonally.

Peel and mince the garlic. Wash and peel the ginger, then mince a small portion of it. Add a little minced garlic and ginger to the beef marinade for added flavor.

Stir-Fry the Beef with Celery

For the best stir-fried beef with celery, it's best to cook the beef and vegetables separately.

First, heat 1 tablespoon of cooking oil in a pan. Once hot, add half the minced garlic and ginger, and sauté until fragrant. Then, add the beef to the pan. Stir-fry the beef over high heat, cooking quickly to prevent it from becoming tough. Stir-fry until the beef is just barely pink, then remove it from the heat and set it aside.

Add 2 tablespoons of cooking oil to the same pan and sauté the remaining garlic and ginger.

Next, add the carrots and stir-fry for about 1 minute over medium heat until just tender. Then, add the onion to the pan.

Increase the heat and stir-fry the onion until it's just starting to soften, then add the celery and leek.

Stir everything together and season to taste with oyster sauce and MSG. Adjust the seasoning to your preference. Cookbeo adds 1/2 teaspoon of seasoning powder, 1 teaspoon of oyster sauce, 1/2 teaspoon of MSG, and 1 teaspoon of fish sauce.

After seasoning, stir-fry for 10 seconds, then add the beef back to the pan. Stir-fry everything together for another 10 seconds over high heat, sprinkle a bit of pepper, and mix well before turning off the heat.
