How to Make Stir-fried Zucchini with Garlic - Vietnamese Style
Stir-fried zucchini with garlic is crispy, nutty, and very appetizing. It's an easy dish to prepare, but many may not know its significant health benefits.
Ingredients
- 3 green zucchinis
- 1 garlic bulb
- Leek or green onion
- Seasonings: oyster sauce, MSG, pepper, coarse salt

Preparing the Ingredients
Trim the ends of the zucchinis, wash them thoroughly, and then slice them into sections or rounds. To keep the zucchini crisp and reduce its sliminess, soak the slices in lightly salted water for about 5 minutes. Rinse and drain well.
Peel and coarsely chop the garlic. Be careful not to chop it too finely, as it can burn easily when stir-frying over high heat.
Clean the leek or green onions and cut them into finger-length sections.
Cooking the Stir-fried Zucchini with Garlic
Heat 2 tablespoons of cooking oil in a pan, then add half of the chopped garlic and sauté until fragrant. Add the zucchini and stir-fry over high heat.
Since zucchini releases a lot of water when cooking, it’s important to stir-fry over high heat to keep it crisp.
After 1 minute, season with oyster sauce and MSG. Stir for another 15 seconds until the zucchini absorbs the flavors, then add the leek (or green onions) and the remaining garlic. Stir-fry for another 15 seconds, then turn off the heat. Optionally, sprinkle with a bit of ground pepper for added flavor.
