  • 900g free-range chicken
  • 1 piece of turmeric, 1 piece of ginger
  • 3 shallots, 2 stalks of lemongrass, 3 garlic cloves
  • 1-2 chili peppers
  • 2-3 lime leaves
  • Coarse salt, ginger wine
  • Marinade ingredients: seasoning powder, MSG, sugar, honey, soy sauce, oyster sauce, fish sauce, ground pepper, five-spice powder, mild chili powder, annatto oil
  • Fresh herbs: mint, Thai basil, cilantro, Vietnamese coriander, lettuce, cucumber
  • Dipping sauce: seasoning salt, ground pepper, chili, lime leaves, lime

Prepare Ingredients and Marinate the Chicken

Rub the chicken with coarse salt and ginger wine to clean and remove any odors. When choosing a chicken, make sure it fits the size of your air fryer basket. Ideally, select a chicken weighing around 900g-1.2kg.

After cleaning the chicken, rinse it thoroughly and let it drain before marinating.

Chop the ingredients like lemongrass, lime leaves, chili, ginger, shallots, and garlic, then blend them into a fine paste. Add the following seasonings to the blend to create a marinade:

  • 2 teaspoons seasoning powder
  • 1/2 teaspoon MSG
  • 2 teaspoons soy sauce
  • 3 teaspoons oyster sauce
  • 1.5 teaspoons sugar
  • 1 teaspoon honey
  • 2 teaspoons fish sauce
  • 2 teaspoons five-spice powder
  • 1 teaspoon mild chili powder
  • 5 teaspoons annatto oil
  • 1 teaspoon ground pepper

Pour the marinade into a bowl and evenly coat the chicken inside and out. Marinate the chicken for at least 30 minutes to allow the flavors to penetrate.

While the chicken marinates, you can prepare the fresh herbs and vegetables for serving and mix the dipping sauce with salt, pepper, lime, and chili.

Roast the Chicken in the Air Fryer

Before roasting, remove any bits of lemongrass, ginger, etc., from the chicken, as these can burn and darken the chicken during cooking.

Depending on your air fryer model, there may be different settings for roasting chicken. Here, Cook Beo will share two methods: roasting chicken in an air fryer with a rotisserie function and roasting chicken in a standard air fryer without this feature.

Skewer the chicken onto the rotisserie spit, securing both ends with screws. Since the legs and wings may dangle, it’s best to tie them to prevent them from getting caught on the heating element.

Once secured, place the rotisserie spit into the air fryer.

Select the rotisserie or chicken roasting setting. Since the chicken is already marinated, you’ll need to adjust the temperature and time according to the chicken's weight. For a 900g chicken, Cook Beo recommends roasting at 190°C for 20 minutes.

After 20 minutes, remove the chicken. Mix 2 teaspoons honey, 1 teaspoon fish sauce, and 4 teaspoons annatto oil, then brush this mixture all over the chicken to enhance its color and flavor.

Return the chicken to the air fryer and roast at 190°C for another 3-5 minutes, adjusting the time to achieve the desired color.

Roasting chicken in a standard air fryer:

If your air fryer doesn’t have a rotisserie function, after marinating, place the chicken on the grill rack, set the temperature to 190°C, and roast for 10 minutes. Then, turn the chicken over and roast for another 10 minutes at 190°C. Finally, brush the chicken with the honey-fish sauce mixture and roast for an additional 5 minutes at 190°C.

The roasting time and temperature may vary depending on your air fryer model and the weight of the chicken. Adjust as needed to achieve the best results.

Final Product Requirements

The whole roasted chicken is incredibly fragrant, with the aroma of lemongrass, ginger, and garlic blending with the spices to create an irresistible dish. The chicken has a beautiful reddish-brown color with a glossy sheen.
