To prevent sliminess, leave the stems on the okra while boiling. Once cooked, trim the stems before serving. Many people tend to cut off the stems, rinse, and slice the okra, but this method can increase sliminess. The simplest and most effective way to reduce slime is to rinse the okra and then soak it in salted water for about 10 minutes. After that, rinse again to clean off the outer fuzz and any slime, then drain the okra in a colander.

How to Boil Okra

Add water to a pot, enough to cover the okra, as this ensures it stays vibrant green. Wait for the water to come to a full boil before adding the okra.

Since okra is naturally mild in flavor, add a pinch of coarse salt to the boiling water to enhance its taste. Boil the okra for about 3 minutes, starting from the time the water returns to a boil after adding the okra.

Once cooked, drain the okra and trim the stems before arranging them on a plate. For a crunchier texture and less slime, plunge the okra into a bowl of ice water right after boiling, then drain.

Tips & Notes

Choosing fresh, young okra is key to a delicious plate of boiled okra. Look for okra with bright green skin, fresh stems, and vibrant color, without wilting or bruising.

Gently touch the okra’s surface: if you feel the bumps of seeds, the okra is likely too mature. Choose smooth, medium-sized okra instead.
