  • 180g glass noodles (vermicelli)
  • 500g chicken giblets
  • 25g dried shiitake mushrooms
  • 10g wood ear mushrooms
  • 70g onion
  • 100g carrot
  • 150g bean sprouts
  • 3 shallots, 2-3 garlic cloves
  • 2-3 eggs
  • 4-5 scallions
  • Small bunch of cilantro
  • Seasonings: seasoning powder, MSG, oyster sauce, fish sauce, soy sauce, ground pepper

Clean the chicken giblets by rubbing them with coarse salt and ginger wine. Scrub the gizzards and intestines thoroughly, while gently massaging the liver to avoid breaking it. Rinse well and drain.

Once clean, slice the gizzards and intestines into thin, bite-sized pieces. You can cut the gizzards in a decorative flower pattern for presentation.

To create a flower pattern on the gizzards, cut the gizzard in half lengthwise, then score several vertical lines on the inside (without cutting all the way through). Next, rotate the gizzard and make one or two horizontal cuts. These incisions will help the gizzards bloom when stir-fried.

Blanch the giblets by bringing water to a boil with a pinch of salt and a few slices of ginger. Quickly blanch the giblets for 30 seconds. This will help remove any odors and make the giblets cook faster and maintain a better texture.

After blanching, rinse the giblets thoroughly to remove any remaining foam or residue. Drain and season the giblets with 1 teaspoon seasoning powder, 1/2 teaspoon MSG, 1/3 teaspoon ground pepper, and 1 teaspoon fish sauce. Let the giblets marinate for 15 minutes.

Rinse and soak the vermicelli, mushrooms, and wood ear mushrooms in separate bowls of warm water until softened. Drain and rinse well. Slice the mushrooms and wood ear mushrooms thinly.

Soak the vermicelli until just soft, not too long to avoid them becoming mushy. Drain thoroughly.

Mince the shallots and garlic. Slice the green onion stems into 2-3 cm pieces, finely chop the white parts. Thinly slice half of an onion and julienne half of a carrot. Rinse the bean sprouts and let them drain.

Stir-fry Vermicelli with Chicken Giblets

First, heat 2 tablespoons of oil in a pan. Once hot, add the minced shallots, garlic, and chopped white parts of the green onion. Stir-fry until fragrant, then add the chicken giblets.

Stir-fry the giblets for 2-3 minutes, then add the shiitake mushrooms, wood ear mushrooms, and julienned carrots.

Once the vegetables are nearly cooked, add the sliced onions and stir-fry for another minute, then add the bean sprouts. Stir briefly and turn off the heat.

Next, stir-fry the vermicelli. Drain the vermicelli and cut it into shorter strands. Beat 2 eggs and mix them into the vermicelli. The egg white helps keep the vermicelli strands separate and prevents clumping.

Heat another tablespoon of oil in the pan and add the vermicelli. Stir-fry until the eggs are cooked and the noodles are separate. Stir constantly to avoid clumping.

If you prefer softer vermicelli, add a bit of water while stir-frying. If you like the noodles slightly crispy, skip the water.

Once the vermicelli is evenly cooked and separate, add the stir-fried giblets and vegetables. Toss everything together and mix well.

Mix thoroughly to keep the vermicelli from sticking together.

Season to taste with fish sauce, oyster sauce, soy sauce, and MSG. Once the vermicelli is soft and evenly seasoned, add the green onions and a bit of ground pepper. Stir for another 5-6 seconds, then remove from heat and plate the dish.
