These ingredients enhance the aroma of the steak, though they are not commonly available in local markets or supermarkets, but can be found at stores specializing in baking supplies or online shops.

For the beef, to achieve the best steak, choose cuts like tenderloin (the rear end of the loin), ribeye (from the rib section), or chuck tender (also known as chuck eye steak). These cuts are tender, juicy, and flavorful, ensuring the steak won’t be dry or tough when cooked.

If you’re pan-searing your steak, a cast iron skillet is the best tool for this dish as it retains heat exceptionally well.

Prepare the Beef

The beef should be cleaned by rubbing it with sea salt, white wine, and minced fresh ginger, then rinsing it thoroughly. Pat the beef dry with a towel or paper. The thickness of each steak should be around 0.5-0.7cm for best results.

Mix 1/2 teaspoon of salt and 1/2 teaspoon of ground pepper in a bowl. Pinch a small amount of the salt-pepper mix between your fingers and sprinkle a thin layer evenly over one side of the beef. Flip the beef over and season the other side the same way. Rub the seasoning into the meat to ensure it is well coated.

Prepare the Other Ingredients

Peel and clean the garlic. Gently press the garlic cloves with the flat side of a knife to release the garlic oil.

Rinse the rosemary or thyme and let them dry.

How to Cook the Steak

Pour olive oil into a pan, just enough to coat the bottom, and heat the pan over medium heat. When the oil starts to smoke lightly, add the beef to the pan to sear it.

Once the outer layer of the beef reaches a good sear (about 30 seconds), it will easily lift from the pan without sticking. Continue searing this side for another 20 seconds before flipping the beef.

At this point, add the unsalted butter, garlic, and rosemary to the pan. As the butter melts, tilt the pan slightly and use a spoon to baste the beef with the butter and oil mixture. When the beef starts to brown and caramelize, flip it again and continue basting for another 10 seconds. Remove the steak from the pan and serve it hot.

Cooking time may vary depending on your preferred doneness (rare, medium-rare, medium, or well-done). You can adjust the cooking time to your taste.
