- 2 aloe vera stalks ~ 800g
- 50g white sugar
- 100g rock sugar
- Coarse salt
- 1 lemon
- Ice cubes
- 6-8 pandan leaves

Preparing Aloe Vera
First, cut off a short piece from the base of the aloe vera stalk, then stand it upright for 20-30 minutes to let the yellow sap drain out.
This yellow sap is what causes bitterness in aloe vera.
Afterward, rinse the stalk thoroughly and remove any parts with remaining sap. Use a knife to peel the aloe vera and extract the flesh.
Cut the aloe vera flesh into small cubes, not too large. To remove the bitterness and sliminess, soak the cubes in a bowl of water mixed with coarse salt and lemon juice.
Soak for about 40 minutes, then drain the aloe vera and rinse it under running water to remove the sliminess. Rinse until your hands no longer feel sticky, and transfer the aloe vera to a bowl.
Boil a pot of water, and when it reaches a rolling boil, pour it over the aloe vera cubes to blanch them. Blanch for about 5 minutes, then transfer the aloe vera to a bowl of ice water and soak for 10 minutes.
Drain the aloe vera thoroughly. Once dry, mix it with 50g of white sugar and refrigerate. This method ensures the aloe vera remains white and crunchy.
How to Make Aloe Vera with Rock Sugar
Add about 1.2 liters of water to a pot and bring it to a boil. Add the rock sugar and let it dissolve completely.
Clean the pandan leaves, set aside one long leaf, and cut the rest into shorter pieces. Bundle the shorter pieces together and tie them with the long leaf. Once the sugar water is boiling, add the pandan leaves for fragrance.
Cook for another 2 minutes, then add the aloe vera cubes and stir. Adjust the sweetness to taste. Continue cooking for another 2 minutes, then turn off the heat and add chia seeds.
Once cooled, ladle the aloe vera with rock sugar into glasses and add ice. For extra flavor, you can add 1-2 slices of fresh lemon and a few mint leaves. Stir well and enjoy.
