- 4 tofu blocks
- 3 tomatoes
- Tomato sauce (if available)
- 2 dried onions
- Scallions
- Cooking oil
- Seasonings: Fish sauce, oyster sauce, MSG, seasoning powder, ground pepper
Ingredient Notes
To prepare Tofu in Tomato Sauce, besides tomatoes, you can also add some tomato sauce or ketchup in order to create a thicker consistency, add color and enhance the flavor of the sauce.
Instructions
Preparing Ingredients
Rinse the tofu and let it drain before cutting into bite-sized pieces.
Wash the tomatoes thoroughly and dice them into small cubes or segments, as per your preference.
Peel the shallots and slice them thin.
Clean the scallions and cut them into 2cm long pieces.
Frying Tofu
Pour cooking oil into a frying pan, enough to submerge half the tofu pieces. Heat the oil, and when it starts to bubble, add the tofu. Remember to flip the tofu to ensure it browns evenly on all sides.
You can also fry the tofu in an air fryer. However, since we will be adding tomato sauce later, you only need to fry the tofu until it's slightly golden and firm. Over-frying can result in dry tofu.
Making Tofu in Tomato Sauce
Heat 2 tablespoons of oil in a pan, add in the shallots and sauté until fragrant. Then, add the tomatoes. To make the tomatoes soften faster and intensify their taste, add a little broth mix or seasoning powder, then cover the pan. Maintain medium heat and you can add a bit of filtered water to prevent the tomatoes from burning.
After about 2 minutes, the tomatoes should be soft and produce a thick sauce. At this point, season with seasoning powder, MSG, soy sauce, fish sauce, and ketchup (if available). You can also add a tiny bit of sugar to balance the sourness. Adjust the seasoning to suit your family's taste.
Add the tofu and stir well to make sure all sides absorb the tomato sauce. At this stage, you should lower the heat to prevent the sauce from drying out.
Simmer the tofu in the sauce for about 2 minutes, season to taste, add the scallions, stir well for 5-6 seconds, then turn off the heat.
Transfer the tofu in tomato sauce to a plate and sprinkle with a bit of ground pepper for an aromatic finish.
The tofu in tomato sauce has a beautiful color, enticing aroma, and the taste is a perfect blend of mild sourness, saltiness, and sweetness.
